Oatmeal Bowl with Figs, Banana and Einkorn Berries


A quick breakfast that is packed with all the nutrients and mineral you require for your daily intake. Most of the items can be prep in under 5 mins and the other ingredients can be prep beforehand and kept refrigerated  for close to a week so that you could use it in other recipes as well. There is not much cooking, at best, roasting the nuts. So why is this recipe here? Because as easy as it looks, it is always good to document down how to prepare a decent bowl of oatmeal. 


Ingredients:
1 cup of Rolled Oats
1 Tablespoon of wild honey
1 Tablespoon of Soy milk soaked Chia Seeds
1 Banana
1 Fig
1 Tablespoon of roasted assorted nuts (sesame seeds, sunflower seed, walnut)
1 Tablespoon of roasted Einkorn Berries

Direction:
  1. Add honey and rolled oats into a bowl. Add hot water enough to cover all the rolled oats. Stir the honey and rolled oats well and let it cool down. I would stir it intermittently.
  2. I soaked the Chia Seeds way before for quick use and instead of water, I soaked the Chia Seeds in soy milk to give it the rich flavor and mildly sweet taste for 2 nights. The soy milk also add extra nutrients to this bowl.
  3. Heat up a pan and roast the assorted nuts/seeds. Set aside. 
  4. Roast the Einkorn Berries to give it an extra crunch. Set aside.
  5. The rolled oats should be slightly creamy by now. Spoon the soaked Chia Seeds into the bowl.
  6. Cut the banana in thick coin shape and the figs in half length-wise. Place into the bowl on top of the soaked Chia Seeds.
  7. Sprinkle the assorted nuts and Einkorn Berries to serve.
You can also store the rolled oats in a close-lid glass jar in the fridge and leave it overnight for overnight oats. Bring the jar out of the fridge the next morning for a super creamy overnight oats.

What is Einkorn Berries
Before we get the flour we have in major stores nowadays (which are highly processed), Einkorn Berries has been used widely instead. Einkorn grain contains only 14 chromosomes as compared to the 42 chromosomes in modern, hybridized wheat. This means that our body is getting more wholesome food and less GMO produced food. Einkorn Berries is subtly sweet and can be used for making porridge, mixed grain rice, sprinkled on salads, baking bread or mill it into fresh einkorn flour. Einkorn Berries also has low gluten levels so they may offer a better option for those who have gluten sensitivities.
